Finally got my Tundra earlier this spring after 16 months of waiting. Mostly city/country driving so far plus a long road trip in August. Towed the travel trailer and did a few trips with dump/livestock trailers. So far I'm pretty happy with it. The ride is awesome and it's got a lot of pep even in Eco mode, and so far the mileage is pretty decent at 13.5L/100 overall (mostly country roads). Towing is more in the 19L range and towing on an FSR in 4x4 is 24L or worse.
I wanted to swap the stock tires but the dealership wouldn't take them off my hands so I kept them for now. FB Marketplace is swamped with TRD stock tires/rims and they don't seem to fetch much more than 50% of the new price, so I'll use them in summer, especially for long road trips with the TT. Going to get a separate set of rims with more aggressive M+S tires for winter driving. Lift kit probably sometime next year ... thinking of 2+2, keep the rake as is. I think I can get 35s on without lifting it.

No I think the 8 foot bed only comes with the Double Cab. With the Crew Cab you only get the 5.5 or 6.5 ft bed options.

My Tacoma gets 14.5/100 on mountain highways of in happy at 90 to 100 kmh. Cruise at 110 and it drops to 19/100.

Tacoma's are known for shitty milage to begin with. I can nurse down a flat valley highway and get closer to 12/100 but that isn't my real world driving.

That's just an average. Pure highway miles is under 12 if you can believe it.

I've been looking at the Tundras for a while, but the gas mileage on the previous year's models always threw me for a loop. My F-150 Ecoboost gets me around 11.6L/100kms (70% hwy / 30% "city") - so didn't want to look at a large downgrade in fuel mileage.
